World’s greatest Gluten Free Carrot Bread; Crispy crust and juicy inside!



7 dl of oats

2 eggs (vegan option: substitute the 2 normal eggs to 2 chia eggs – explanation found below)

250 gram yogurt – approx. 2,5 dl (vegan option: choose a plant based yogurt such as oatgurt)

2 teaspoons bicarbonate

1 teaspoon of sea salt

200 g of shredded carrots – approx. 4 middle sized carrots


1 dl of hazelnuts/walnuts

1 dl of dried apricots

Ingredients for 2 chia eggs

2 tablespoons of chia seeds

6 tablespoons of water


Instructions bread

  1. Set the oven on 180 degrees celsius
  2. Mix the oats into a flour
  3. Peel and grate the carrots
  4. Place all ingredients in a blender and mix it until you have a smooth texture
  5. Optional: Chop the nuts and dried fruits and add it to the bread mixture
  6. Prepare a bread form with coconut oil so the bread won’t stick to the form when it is done
  7. Place in the oven for about 55 minutes or until the bread reaches 98 degrees of temperature.
  8. Let the bread cool off and serve with anything you love on top!

Instructions chia eggs for vegan option

  1. Add water and chia seeds in a bowl
  2. Stir around and let rest for 10 minutes until it thickens
