Saffron buns x breakfast edition


I don’t know for how many years I’ve been trying to come up with the perfect recipe for a “healthified” Swedish saffron bun. Although I’ve always been really happy with the flavor, the consistency has just never turned out the way I want it to – UNTIL THIS YEAR!

Getting the fantastic idea of making a saffron banana bread, the saffron dream I for so long envisioned has finally been realized. Follow the steps in this recipe and enjoy what tastes just like lussekatter, for breakfast!!! ✨

3 dl of oats

2 dl of almond flour

3 ripe bananas

3 eggs

1/2 teaspoon of cinnamon

1/2 teaspoon of cardamom

1 teaspoon of baking powder

1 gram of saffron

3/4 teaspoons of sea salt

75 gram of organic butter

1/2 dl of raisins


  1. Set the oven at 175 degrees Celsius

  2. Place all ingredients but the raisins in a bowl

  3. Mix everything together

  4. Add the raisins to your saffron batch

  5. Batter a baking form with coconut oil or butter

  6. Bake in the oven for about 40 minutes or until the bread has gotten a golden top layer!

  7. Let cool and enjoy your freshly baked saffron bun bread just as it is, dip it in a cup of coffee, or butter it up with a slice of cheese and some cucumber? Whatever you do – I promise you it’ll be damn delicious✨
