Sweet Potato Waffles

Remember the gluten free waffle recipe that I posted earlier this year for the Swedish “Waffle Day”? Crafted from nutritious teff flour, I then topped my creation with homemade nutella, coconut yogurt, berries and banana (a recipe you just have to check out if you haven’t already).

Anyways, as waffles have always been a favorite breakfast of mine, I thought it was about time to go ahead with a savory alternative that at least made me fall in love with waffles, even more! Made from only three ingredients, these sweet potato waffles are literally the best; so simple to make and packed with nutrition! And the greatest part? The topping possibilities are limitless!

Sweet Potato Waffles

Ingredienser

500 grams of sweet potatoes

3 eggs

1/2 dl of corn starch (maizena)

Sea salt

Butter/Ghee/Coconut oil/Tallow to fry

Instruktioner

  1. Peel and grate the sweet potatoes using a grater.
  2. Squeeze out all the liquid from the sweet potatoes and place in a bowl.
  3. Add eggs, cornstarch and salt.
  4. Remix to a smooth batter.
  5. Heat up the waffle iron and grease all surfaces.
  6. Fry the waffles until they turn golden.
  7. Serve with whatever you want! I topped with sour cream that I mixed with dill and Västerbotten cheese, avocado, red onion and tomato!
