Protein Pancake Stack

Introducing a hormone friendly breakfast idea: my 4-ingredient gluten-free protein pancakes! This recipe is not just rich in protein, but also boasts healthy fats and complex carbohydrates. Plus, they’re crafted from affordable ingredients commonly found in any kitchen pantry – just the way I like it! 🙂

Protein Pancake Stack

Ingredienser

1 dl of cottage cheese
1 dl of oats
1 egg
1 teaspoon of baking powder
Sea salt
Optional: lemon zest!
Coconut oil/ghee to fry

Instruktioner

  1. Add all ingredients into a food processor
  2. Add coconut oil/ghee in a frying pan
  3. On medium heat: form three thicker pancakes (in Swedish: “plättar”). Flip them when the surface has turned golden.
  4. Serve with a nice cream made of the following ingredients that you mix in a food processor:
    a. frozen banana
    b. frozen mango
    c. cottage cheese
    d. optional: vanilla protein powder
  5. Add the nice cream on top of your pancake stack, some berries, nut butter and whatever other ingredient you think will make your pancakes the prettiest<3
