RECEPT

Sweet Potato Waffles

Portioner: 6

500 grams of sweet potatoes

3 eggs

1/2 dl of corn starch (maizena)

Sea salt

Butter/Ghee/Coconut oil/Tallow to fry

Peel and grate the sweet potatoes using a grater.

    Squeeze out all the liquid from the sweet potatoes and place in a bowl.

    Add eggs, cornstarch and salt.

    Remix to a smooth batter.

    Heat up the waffle iron and grease all surfaces.

    Fry the waffles until they turn golden.

  • 7

    Serve with whatever you want! I topped with sour cream that I mixed with dill and Västerbotten cheese, avocado, red onion and tomato!
