World’s greatest Gluten Free Carrot Bread; Crispy crust and juicy inside!
Portioner: 1
7 dl of oats
2 eggs (vegan option: substitute with 2 chia eggs)
250 gram yogurt (vegan option: plant-based yogurt)
2 teaspoons bicarbonate
1 teaspoon of sea salt
200 g of shredded carrots
Optional
1 dl of hazelnuts/walnuts
1 dl of dried apricots
Ingredients for 2 chia eggs
2 tablespoons of chia seeds
6 tablespoons of water

Set the oven on 180 degrees Celsius.

Mix the oats into a flour.

Peel and grate the carrots.

Place all ingredients in a blender and mix until smooth.

Optional: Chop the nuts and dried fruits and add to the mixture.

Prepare a bread form with coconut oil.

Place in the oven for about 55 minutes or until the bread reaches 98 degrees.
